My first thought after trying this carrot cake was..."OMG this is freakin' delicious!" Only later did I find out that it's gluten-free. Add a few ingredients from your pantry and this mix will feed you and all of your friends- easy substitutions will make it dairy-free also. Package yields (3) 8" cake pans- you can also freeze prepared batter (up to 10 months) in pans and then bake when desired (may need to slightly increase baking time).
